Whipped Ricotta Dip

It’s BRIE and RICOTTA, I feel like that is reason enough, but I will give you more because yeah, it is that good. This recipe is super quick and easy to make. I love it when I’m hosting people and I need a last minute appetizer. The honey and the caramelized onions add that sweet and savory element that makes this recipe sooo good. This recipe is very versatile, you can play with the toppings or just leave it as is. It is honestly delicious even without toppings!
Slice the onions very thinly. Preheat a pan for 2 minutes on medium high. Add a tiny bit of olive oil and the onions. Lower heat to low.
Let them caramelize for about 45-50 minutes, mixing them in between every little bit. I like adding 1 tbsp water once or twice in the process.
Add in balsamic and Tamari. Cook another 5 minutes. Turn heat off and add in the butter and salt.
Remove the rind from the brie and cube.
Add to a food processor with the ricotta and honey. Process until smooth, about 2-3 minutes.
Spread on a plate, top with the onions, honey, and chives and that is it!
