Watermelon and Feta Bites

Skewer your sweet, juicy watermelon sandwich with the savory, tangy feta in-between. Top it with a slightly spicy, tangy glaze and mint - this the truly perfect bite!
To a saucepan, add honey, crushed peppers and balsamic, bring to a simmer. Turn off when it coats the back of a spoon. Let it cool.
Cut your watermelon in half and remove the rind. Cut the watermelon into a rectangle that is about 1 inch thick. Cut the rectangle in half lengthwise so you have two rectangles about ½ thick, see video to watch it done.
Cut your block of feta to match the size of your watermelon rectangle. Slice the feta rectangles in half lengthwise so they're about ½ thick.
Place a piece of watermelon in the bottom, the feta in the center then watermelon. Cut into 6 squares. Repeat with remaining feta and watermelon.
Top with the spicy honey, crushed pistachios, mint and skewer. Enjoy!
