These Crispy Phyllo Brie Bites are stunning, delicious and so easy to make…also, the perfect recipe for leftover phyllo dough sheets when you don't know what to make - the perfect little baked brie appetizer, if you ask me.

Preheat the oven to 425℉.
Open up 12 brie bites and throw them in the freezer for 10 minutes.
On a cutting board, roll up your phyllo dough. Slice it into very thin strands, about 1/16 of an inch.
Divide your phyllo strands into a 12 even sections, as shown in the video.
With a basting brush, coat a brie bite with butter, place in the center of the phyllo mound. Make sure there's plenty of butter on the top and start wrapping the brie with phyllo, brushing with more butter as needed. You can use plastic wrap to help wrap it tightly, if needed. Top the bite with a few extra phyllo strands for texture. Repeat with all brie bites.
Place the phyllo brie bites on a baking sheet and bake for 15-18 minutes or until golden.
Drizzle with honey, crushed pistachios, crushed red peppers and chives.
