Brie Cake with Whipped Cherry Brie and Pistachios

This cherry brie cake is made by layering a wheel of brie with whipped brie blended with cherry jam, then stacking it back together like a savory cake. Finished with cherries and pistachios, it’s a no-bake, prep-ahead cheese centerpiece that’s perfect for entertaining, gifting, and special occasions.
Slice the Brie Crosswise: Place the wheel of brie flat on your cutting board and carefully slice horizontally through the middle of the brie. Set the top half off to the side.

Make the Whipped Brie: In a food processor, blend the triple cream brie (rind removed) with the cream cheese until smooth. Divide the mixture into two bowls. To one of the bowls mix in the cherry preserves, dried cherries, and half of the chopped pistachios to make your whipped cherry brie.

Make the Brie Cake: Spread the whipped cherry brie on the cut side of the bottom brie slice, then place the top half over it. Press gently and, using a butter knife or a spreader, clean up around the edge, smoothing the whipped brie. Refrigerate 30 minutes to set.
Finish and Serve: Spread the remaining plain whipped brie from the other bowl on top. Sprinkle the top with the rest of the pistachios. Remove the cherries from the syrup and pat them dry with a paper tower. Trim the stems so they are even and then arrange the cherries on top. Chill for another 30 minutes uncovered. Right before serving, top with flaky sea salt and drizzle with honey. Serve with toasted baguette slices and enjoy!
