Crispy Phyllo with Whipped Feta and Honey

Layers of crispy phyllo dough are stacked with a herbed feta cream and crushed pistachios, then folded into skewers. The dish is baked until golden and finished with a sweet honey drizzle and fresh chives.

Make the Whipped Feta and Honey: Add cream cheese, feta, white wine vinegar, honey, lemon zest, basil, parsley, chives and garlic to a food processor. Process until smooth.

The Phyllo Dough Layers: Brush melted butter between the first three layers of phyllo dough. On the fourth layer, spread a thin layer of the feta cream and sprinkle with crushed pistachios. Repeat the sequence of three buttered layers and one feta/pistachio layer until the phyllo is used. Brush the final top layer with melted butter.

Cut and Skewer: Slice the phyllo stack into 1 inch strips. Fold each strip into an S-pattern and thread onto a skewer.
Chill: Place the skewers on a plate and cover tightly with plastic wrap. Refrigerate for at least 30 minutes. These can prepared as early as that morning and refrigerated.
Bake: Preheat oven to 400°F (205°C). Transfer the skewers to a baking sheet. Bake for 25-28 minutes or until golden brown.
Finish: Drizzle with honey and garnish with chopped chives.
