Chipotle Shrimp Quesatacos

these are SO good and so easy…I recommend using queso oaxaca but all I had was provolone and it worked!

1. Chop the shrimp pretty small, and pat dry. 2. Add shrimp to a bowl with the mayo, paprika, oregano, coriander and seasoned salt. Mix well. 3. Preheat a pan with a bit of olive oil on high for 2 min. Brown shrimp for 2 min. Remove from pan. 4. Lower heat to medium low and add the onion and garlic. Cook until translucent. Add in chipotle adobo and cook for 2 min. 5. Raise the fire to medium, add shrimp back in and cook together for 1-2 min. Turn heat off, squeeze the lemon and add the butter. 6. Preheat another pan on high for 2 min, add the provolone followed by a tortilla and flip to get a golden cheese crust, add in shrimp and fold. Cook for 1-2 min per side or until slightly crispy. 7. Serve with salsa and cilantro.
