Baked Brie and Preserves

0 Sautee your bacon on low for 6-7 min to render the fat. Raise heat to medium and add in shallots. Sautee until the bacon gets crispy and shallots get jammy.
1 Add in honey and salsa macha. Mix together and cook for 1 min.
2 Add in preserves and pinch of salt. Turn heat off.
3 Roll out puff pastry and using a round dinner plate cut out a circle.
4 Score your brie.
5 Add the jam to the center of the puff pastry and place the brie scored side down.
6 Wrap it and seal the edges VERY WELL with eggwash.
7 Tie your brie with 4 pieces of kitchen twine all around to shape pumpkin, as shown in the video. Tie twine at the top so you can remove easier.
8 Brush with eggwash, trying to avoid the twine.
9 Bake at 400°F for 30-35 min until golden.
10 Add a sage leaf.
11 Serve with bread, apples and pears.
