Chipotle Shrimp Quesatacos

these are SO good and so easy…I recommend using queso oaxaca but all I had was provolone and it worked!

What you need
dried oregano

seasoned salt

coriander powder

garlic

yellow onion
chipotle in adobo
lemon

unsalted butter
provolone

corn tortilla

cilantro

tomatillo salsa

mayonnaise

smoked paprika
Instructions
1. Chop the shrimp pretty small, and pat dry. 2. Add shrimp to a bowl with the mayo, paprika, oregano, coriander and seasoned salt. Mix well. 3. Preheat a pan with a bit of olive oil on high for 2 min. Brown shrimp for 2 min. Remove from pan. 4. Lower heat to medium low and add the onion and garlic. Cook until translucent. Add in chipotle adobo and cook for 2 min. 5. Raise the fire to medium, add shrimp back in and cook together for 1-2 min. Turn heat off, squeeze the lemon and add the butter. 6. Preheat another pan on high for 2 min, add the provolone followed by a tortilla and flip to get a golden cheese crust, add in shrimp and fold. Cook for 1-2 min per side or until slightly crispy. 7. Serve with salsa and cilantro.View original recipe
