What you need

napa cabbage

cup scallion

tbsp cilantro

cup tahini

tsp maple syrup

tbsp tamari

tsp rice vinegar

tsp sesame oil

tbsp gochujang

tbsp shichimi togarashi

head granulated garlic
Instructions
0 First, drizzle some olive oil to the garlic head with some salt, cover in foil and roast at 400F for 1 hour. 1 Secondly, shave the cabbage and remove the excess moisture REAL well. 2 Then, squeeze the garlic and form a paste with the back of a knife. 3 Mix the garlic, tahini, maple syrup, rice vinegar, Tamari, Shichimi Togarashi, Gochujang and sesame oil. It will be thick and that is okay, you’ll add noodle water. 4 Preheat a pan on high for 2 minutes. Then, add a bit of sesame or olive oil and sauté until charred. 5 Bring water to a boil, add salt and the ramen. They cook super fast, like 2-3 minutes maximum. 6 Then, add noodle water to the sauce until thin enough. Add salt/pepper if needed. 7 Add noodles to the cabbage with the sauce, scallions and cilantro. Then, mix and serve. 8 Lastly, top with more Shichimi Togarashi, scallions and lime.View original recipe
