What you need

tbsp butter

tbsp olive oil

salt & pepper

creme fraiche

smoked salmon

chive

black pepper
lemon zest
Instructions
0 Grate your potatoes (see How To Prepare for suggestions on this) and squeeze out every last bit of moisture out of them using a kitchen towel (clean obviously) or cheesecloth. 1 Add the melted butter and olive oil to the potatoes and season. 2 Preheat a cast iron for 2 minutes on high. Then, add olive oil and the potatoes. 3 Gently press it with the spatula but don’t over press so they’re still fluffy. 4 Cook for about 12 minutes per side on medium or medium high depending on how hot your stove gets or until golden brown. Top it with the creme fraiche, chives, dill, salmon, capers, olive oil and pepper.View original recipe
