What you need

shallot

tbsp black sesame seeds

tbsp cane sugar
tbsp tamari soy sauce

cup rice vinegar

tbsp sesame seed

fl oz ice water

tsp honey

oz salmon

serrano pepper

tbsp fresh chives
Instructions
0 On a plate, mix both the black and toasted sesame seeds along with the chives. 1 In a small bowl, mix ½ tsp honey and ½ tsp tamari. Brush it on both sides of your salmon. 2 Firmly press both sides of the salmon into the sesame-chive mixture to coat. Place in the freezer for 15 minutes to firm up. 3 Pat dry the thinly sliced shallots and add to a cold pan. Add enough oil to coat then turn the heat to medium. Fry until golden. Transfer to a paper towel to drain. 4 In a small saucepan, add the tamari, rice vinegar and sugar. Simmer, whisking frequently, until it very lightly coats the back of a spoon (about 3-5 minutes). Transfer to a bowl and cool over an ice bath. 5 Remove the salmon from the freezer and slice into 8 even pieces. 6 Spoon the cooled sauce onto a serving plate and arrange the salmon slices over the sauce. Top each piece with fried shallots and a slice of serrano. Enjoy!View original recipe
