Truffle Brie Cake with Whipped Brie

This truffle brie cake is a layered brie wheel filled and finished with whipped brie mixed with fresh truffle, then topped with shaved truffle arranged like a simple flower. 0 Slice the Brie Crosswise: Place the wheel of brie flat on your cutting board and carefully slice horizontally through the middle of the brie. Set the top half off to the side. 1 Make the Whipped Brie: In a food processor, blend the triple cream brie (rind removed) with the cream cheese until smooth. Divide the mixture into two bowls. 4 Prepare the Truffle: Shave the truffle into thin strips. Set aside about ¼ of the shavings and finely chop them, then mix the chopped truffle into one of the bowls of brie to make whipped truffle brie. 2 Make the Brie Cake: Spread the whipped truffle brie mixture on the cut side of the bottom brie slice, then place the top half over it. Press gently and, using a butter knife or a spreader, clean up around the edge, smoothing the whipped brie. Refrigerate 30 minutes to set. 3 Finish and Serve: Spread the remaining plain whipped brie from the other bowl on top. Sprinkle the top with truffle salt and then arrange the rest of the black truffle slices into a flower. Chill for another 30 minutes uncovered.
