What you need
tbsp tamari soy sauce

tsp nutmeg

tbsp salted butter

cup baguette

tbsp balsamic vinegar

thyme

salt

cup gruyere

tsp cayenne

extra-virgin olive oil

oz cavatelli

yellow onion

chive

cup parmigiano reggiano

pt beef bone broth

shallot
Instructions
Slice the onions very thinly. Preheat a pan for 2 min on medium high. Add a tiny bit of olive oil and the onions. Lower heat to low. Add a pinch of salt. Let them caramelize for about 45 min, mixing them in between every little bit. I like adding 1 tbsp bone broth once or twice in the process to deglaze. Add in balsamic, thyme, nutmeg, cayenne and tamari. Cook another 5 min. Add your parm and baguette to a food processor with a pinch of salt and pulse until pulverized. Add to a baking dish and drizzle with olive oil. Bake at 350F for 12-15 min or until golden. Bring your bone broth to a boil and add in your pasta. Cook until almost al dente. Add the pasta and bone broth directly over the onions, add in gruyere and simmer for 2 min mixing to incorporate the cheese. Turn heat off and add in butter. Mix and serve. Top with the breadcrumbs and chives.
